Spicier Hoppin’ John

1-tablespoon olive oil
1 medium onion, chopped
1 medium green bell pepper, chopped
5 stalks celery, chopped
2 cups chicken broth
1-cup brown rice
4 (15-ounce) cans black-eyed peas with liquid
1 (10-ounce) can diced tomatoes and green chilies
1 (14.5-ounce) can diced tomatoes
2 cloves of garlic, finely chopped

  1. In a large saucepan over medium heat, sauté the onion, pepper and celery until tender in the olive oil.
  2. Once sautéed, pour in the chicken broth, and mix in the rice, black-eyed peas with the liquid, diced tomatoes and green chilies, diced tomatoes and garlic.
  3. Bring to a boil; reduce heat to low and simmer 45 minutes, or until rice in tender.
  4. Add additional water if the soup is too thick.

This recipe provides only 281 calories per 1 cup serving, 4 grams of fat, 13 grams of protein and 9.7 grams of dietary fiber.

Washington Apple Cake

Ingredients

  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 4 cups thinly sliced apples
  •  
  • 2 (3 ounce) packages cream cheese, softened
  • 1/4 cup butter, melted
  • 2 cups confectioners' sugar
  • 1 teaspoon lemon juice

Directions

  1. Preheat oven to 350 degrees. Butter a 9x13 inch pan. Spread apples evenly over the bottom of the pan.
  2. Beat eggs with mixer until thick and light. Combine sugar and oil and add to eggs.
  3. Stir together flour, cinnamon, soda and salt. Add to egg mixture and beat in. stir in nuts and vanilla. Batter will be very thick.
  4. Spread batter over apples in the pan. Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted into the center comes out clean. Remove from the oven and cool. Spread with Cream Cheese Icing.
  5. To make Cream Cheese Icing: Beat cream cheese until fluffy. Beat in 1/4 cup melted butter, then beat in confectioners sugar and lemon juice. Spread over cooled cake. Refrigerate.
