Maple Zucchini Bread

3 eggs
1 cup vegetable oil
1 cup packed brown sugar
1 cup white sugar
3 teaspoons maple flavored extract 
2 1/2 cups all-purpose flour 
1/2 cup wheat germ
2 teaspoons baking soda
2 teaspoons salt
1/2 teaspoon baking powder
2 cups grated zucchini
1 cup chopped walnuts


DIRECTIONS:
In a mixing bowl, beat the 3 eggs; add oil, sugars and flavoring, mixing until foamy. Blend in the flour, wheat germ, baking powder, soda, and salt. Stir in zucchini and nuts. Pour batter into 2 greased bread pans.
 
Bake at 325 degrees F (165 degrees C) for 1 hour. Cool.

    "Well, I finally made the bread. There was one change I made. Instead of 1 cup of oil I used 1/2 cup oil and half cup of non fat yogurt. The taste was very good and I would make it again. Yummmm
